- What is the difference between fresh thyme and dried thyme?
Fresh thyme is bright green and has a lighter flavor compared to dried thyme which is why you can use larger amounts of it when cooking. Dried thyme is dull in color and would have a more potent flavor because drawing out moisture from the herb would result in a more dense and compact flavor.
